Gunpowder Green Tea vs Chunmee Green Tea: Key Differences
The appearance of Chunmee Green Tea and Gunpowder Green Tea is one of the most noticeable differences between the two. Chunmee, which translates to "precious eyebrow," is named for its leaves' curved shape, resembling the eyebrows of classical Chinese beauties. The leaves are carefully shaped and pan-fried to achieve this appearance. In contrast, Gunpowder Green Tea is rolled into small, round pellets that resemble gunpowder grains, hence its name. This rolling process is a traditional method that dates back centuries and is believed to help preserve the tea's freshness and flavor during storage and transport.
Production Process
Harvesting
Tender tea leaves are carefully harvested either by hand or by machine. Usually, the bud or one bud with two leaves is selected to ensure good quality. Strict harvesting standards are followed to ensure uniform leaf size and maturity.
Withering
After harvesting, the fresh leaves are spread out for about 12–18 hours to reduce moisture content. Withering can be done under sunlight or indoors using specialized equipment. This process reduces leaf cell activity while maintaining the natural green color of the leaves.
Fixation (Kill-Green)
Fixation is an important step in the production of Gunpowder Tea. Compared with other green teas, the leaves maintain a slightly higher moisture content of about 60–64%. The process usually uses a “first steaming, then tossing” method to stop enzymatic oxidation.
Rolling
The tea leaves are rolled for about 10–20 minutes, depending on leaf maturity. Compared with other green teas, rolling time is shorter and lighter pressure is applied to help form the characteristic pellet shape.
Drying and Shaping
Gunpowder Tea uses a special “low-temperature, long-frying” drying method. A relatively large quantity of leaves is used in each frying step to promote the rolling and shaping process. The final tea pellets become hard, round, and tightly rolled, resembling gunpowder grains.
